How to cook manna on kefir with cottage cheese

In a small bowl, mix dry semolina and kefir. This combination is classic for preparing manna. Thanks to kefir, the semolina will swell, and the finished semolina will become airy and tall.

Leave the semolina mixed with kefir for 15-20 minutes, during which time it will swell to such a state that it becomes difficult to turn a spoon in it.

By the way, pay attention to the choice of semolina, it is best to use small white semolina, take a closer look and you will see that there are different types of semolina on the shelves, choose the one that is cleaner, smaller and lighter.

Place sugar, vanillin, eggs and cottage cheese in a wide and deep bowl so that it is convenient to mix the ingredients. If you have an immersion blender, great, beat all the ingredients until smooth. The mass should turn out airy, like cream. If you don’t have a blender, just beat the mixture by hand, using a fork or a whisk.

Add baking powder and the previously prepared mixture of kefir and semolina, which has swollen by this time, to the sweet curd-egg mixture for manna. Mix again with a blender for 5-7 minutes, this is necessary so that the mass becomes homogeneous and the semolina is evenly distributed throughout the dough.

As you can see, the dough should have the consistency of thick sour cream (even a little thicker). Prepare a springform pan for manna with cottage cheese. In this case, a Teflon-coated mold with a diameter of 24 cm is used. Before use, grease the mold with butter (both the bottom and the walls) and sprinkle with semolina, or use baking (parchment) paper.

Pour the manna dough into a springform pan, lightly tap it on the table so that the mixture acquires a smooth surface and all air bubbles are released.

Bake cottage cheese manna with kefir in a preheated oven at 180 0 for 35-40 minutes. Check the readiness of the baked goods with a dry match - if when piercing the product it remains dry, then it can be taken out. Some recommend leaving the manna to cool in the oven turned off so that it does not fall off.

Remove the cake from the pan and sprinkle with powdered sugar or frosting.

Cut the manna into pieces and serve with tea. Bon appetit!

But I wanted to cook it somehow unusual. I looked in the refrigerator to see what I could make it out of. And the first thing that caught my eye was the cottage cheese left over from breakfast. Great! Not everyone uses it to prepare manna, but in vain. With its use, the finished product turns out to be lush in shape and delicate in taste.

And so it was decided, we use cottage cheese and milk for baking, but not fresh, but fermented. If you don’t have such milk, then you can take fresh milk, or the traditional type of baked goods - kefir. And so that our manna takes on a new shape and a new taste, we will use fruit as a filling, and dry cookies as a base.

I can already imagine how delicious it will be! Even an ordinary manna is always met with a bang! And this one can shout “Hurray!” more than once. And so let's get started.

Curd manna with milk with fruits or berries

We will need:

  • semolina - 1 tbsp.
  • sugar - 1 tbsp.
  • milk - 1 tbsp.
  • flour - 1 tbsp.
  • cottage cheese - 1 tbsp.
  • egg - 2 pcs.
  • baking powder - 1 teaspoon (or soda slaked with vinegar)
  • dry cookies - 100 gr.
  • vanillin - on the tip of a knife
  • filling - fresh or frozen fruits (or berries)
  • butter - 1 tbsp. spoon
  • salt - a pinch
  • powdered sugar - for sprinkling

Preparation:

1. Beat eggs with sugar using a whisk until smooth.

2. Add milk. I use fermented milk. We often make it at home, and homemade is homemade, everyone loves it. In addition, it can be added to the dough for pies, pies, and muffins. Therefore, for manna, I also often use it.

If you don’t have such milk, then fresh milk is also perfect; manna will turn out just as good. The only thing you will need to add to the dough is an extra tablespoon of flour. If there is no milk, then kefir or sour cream will do. In general, the milk component should be no less than a glass. If, for example, you have half a glass of milk and half of kefir left, then it will be just fine!

3. Mix the milk and add semolina. Let's stir again.

4. Now add baking powder and salt. Stir again and add cottage cheese and vanillin.

5. Now it’s the flour’s turn. Mix thoroughly and leave for 20 minutes for the semolina to swell.

6. While the dough reaches the desired state, let's prepare the cookies and fruit.

7. Crush the cookies into small pieces using a masher. This will be our basis for the manna.

8. You can take absolutely any fruit. Pitted cherries, plums, apricots, apples, pears…anything works well. Everything you can find in your kitchen.

When the berries are ripe, be sure to prepare manna using them, believe me, it’s worth it! It turns out not only tasty, but also beautiful and aromatic.

I'm using frozen fruit today. I still have sloe, or Ural plum. It is the size of a large grape and has a sweet and sour taste. Just what you need. Manna will not turn out to be cloyingly sweet; sour plums will give the desired flavor note. I have them with a bone, it needs to be removed.

9. To do this, I rinse the frozen berries with cold water and place them on a paper napkin to drain off excess liquid. Then I cut it into two halves and easily remove the pit.

10. Prepare the form. Either a deep silicone mold or a glass one will do. I will make manna in glass form. Grease the bottom and sides with soft butter. Place the rest on the bottom. Sprinkle crushed cookies on it. Lightly press it with your hand, as if compressing it.

11. Pour in a little, about 1/3 of the finished dough, so that all the cookies are covered.

12. Carefully spread the filling in a thick layer. But we don’t press the contents into the dough, we just put it in as it lies.

13. Pour the remaining dough on top. Let stand for 5 minutes so that the dough penetrates into all the voids.

14. Bake in an oven preheated to 180 degrees for 30 minutes. The mannik should be browned by this time. Determine readiness with a toothpick. When you pierce the finished product with it, there should be no sticky dough left on it.

15. Remove from the oven. Cover the top with a large flat board and turn it over. Mannik ended up on the board, but “upside down.” Have a large flat plate or dish ready. Cover the manna with a plate and turn it over again.

16. Let it cool a little and sprinkle with powdered sugar. Serve warm or cooled, as you like, with hot tea.

The manna turned out very beautiful when cut. It turned out to be several layers.

Sometimes I whip up a cake from such manna. All you need is cream and beautiful design. While it is cooking, you can make the cream. Any will do - personally, I really like sour cream. I think it goes very well with manna, and is very tasty on its own. Moreover, it is very simple to make.

In order to apply the cream, the manna must be completely cooled. Then decorate and refrigerate for at least 2-3 hours. Then serve with tea.

How to make sour cream

We will need:

  • sour cream - 0.5 l
  • sugar - 1.5 cups

Preparation:

Beat the chilled sour cream with sugar using a mixer into a fluffy foam. It is better to use thick and fatty sour cream. The cream made from such sour cream will definitely not spread.

You can check the readiness of the cream by turning the bowl left and right. If the cream does not move from side to side. it means he's ready!

You can decorate the manna cake at your own discretion, as your imagination dictates. It turns out very beautiful and tasty - decorate it with fresh berries and fruits.

Bon appetit!

Dear mothers, you can rightfully say that this recipe is dedicated to you, because only you know how difficult it is to get your child to eat semolina porridge or cottage cheese.
