How to bake delicious crumpets. Yeast donuts without eggs

Pyshki are considered the national Russian dish. But few modern housewives know how to cook these fried donuts without a hole.

After all, in order to create a truly delicious dish, it is important to know some secrets of its preparation.

Therefore, if you are tired of spoiling these delicious buns, then it’s time to prepare the right crumpets - experienced housewives are ready to provide the recipe for this dish.

After all, it is better to use the wisdom of real experts once than to try unsuccessfully to prepare this traditional dish a hundred times.

Many believe that this dish is originally Russian. But some nations may argue with this. So, in Poland there was a similar dish and the word “crumpet” comes from “pączek”.

Moreover, this word appeared long before the Russian name. At the same time, old Slavic writings mention sweets made from flour fried in boiling oil.

They were called puffs, because when lowered into the frying pan, the dough made a specific sound - it puffed.

Another piece of evidence in favor of Rus' is the detailed description of the crumpet recipe in the writings of the times of Ivan the Terrible.

In those days, they were traditionally served at the royal table as a traditional dish.

The first news of balls being cooked in boiling oil came to us from Ancient Rome. There they were called “globules”. Further mentions date back to the Middle Ages.

It was at that time that krapfens became popular. These are the same donuts, but with a specific shape of the English “S”.

In those days, these dishes were prepared without filling and this is a classic recipe, popular to this day. Fruit jams began to be added to them only in the 18th century.

There are also versions that donuts were invented by Jews and Americans. In the distant past, the latter even treated postmen to this dish.

But for the USA, donuts are more traditional. In fact, these are the same donuts, but with a hole in the middle.

Tribute to the classics

The traditional crumpet recipe involves preparing the dough in milk.

To prepare, you need to take the following ingredients:

  • milk;
  • flour;
  • water at room temperature;
  • eggs;
  • margarine;
  • yeast;
  • sugar;
  • salt;
  • powdered sugar or jam.

To make the crumpets tasty, it is important to prepare high-quality yeast dough.

Therefore, it is better to use the following step-by-step recipe:

  1. Let's prepare the dough.
    To do this, warm the milk slightly; it should be slightly warm, not hot. Then add yeast, sugar and a tablespoon of flour to it. Leave the resulting mixture for 20 - 30 minutes. You can tell that the dough is ready by the bubbles that appear on its surface.
  2. Let's make the dough.
    Add flour, more sugar, a pinch of salt, eggs and margarine to the prepared dough. Please note that the latter should be soft, but not melted. Then, fluff the dough a little and send it to a warm corner to rise. Typically, the volume of the mixture increases by 2–4 times. Leave it to rest for about 30 – 60 minutes, it all depends on how it rises.
  3. Prepare the dough.
    The risen dough should be divided, just be careful not to make it too stiff.
  4. We make crumpets.
    They are cooked in a frying pan: put it on the fire, pouring in sufficient quantities of refined sunflower oil, as in deep frying. Scoop up the dough with a tablespoon and drop it into the boiling oil. The donuts should brown evenly on both sides.
  5. Before serving.
    When removing crumpets from the frying pan, you should first place them on a paper towel to drain the oil. Then place the dessert on a plate and sprinkle with powdered sugar. You can also top them with jam, honey and other toppings.

Helpful advice: do not make donuts from too stiff dough. The consistency should be the same as on pancakes, similar to thick sour cream.

It is also worth sifting the flour before adding it to the dough. This will make the crumpets cooked in a frying pan more airy.

Modern recipes for crumpets with milk can be more varied. So, you can add fillings, vanillin and cinnamon, as well as cardamom.

Various toppings can be either poured over the top of the dish or introduced into the crumpets. How to do it? It is worth using a pastry syringe.

Recipe for making crumpets with kefir

Modern housewives love to experiment. Of course, yeast dough, although a classic, is very painstaking to prepare and requires a lot of routine processes.

Therefore, various methods of preparing this dish, characterized by economy and maximum simplicity, quickly began to appear. One of them is a recipe for kefir crumpets.

Why should milk be replaced with this product? Yes, because when cooking with kefir, yeast is not needed.

After all, this drink is a product of natural fermentation and actively interacts with flour, sugar and other ingredients, making the dough more tender and fluffy.

The taste of these crumpets is simply amazing. What can I say! You need to check it yourself! To do this, just follow this recipe.

To make kefir crumpets you will need the following ingredients:

  • flour;
  • kefir;
  • sugar;
  • one egg;
  • salt with soda;
  • vegetable oil.

Please note that in this recipe the soda should not be quenched. Just add this component to kefir, along with salt and sugar.

Step-by-step instruction:

  1. Prepare kefir.
    Pour the drink into the dough container and mix with sugar, salt and soda. Gently stir everything until the ingredients are completely dissolved.
  2. Add the egg.
    When preparing donuts with kefir, it is more convenient to stir it with a fork, because it is important to properly separate the white and yolk, distributing them evenly throughout the mass.
  3. Add flour.
    It is important that the dough does not turn out too tough. It should be firm enough to roll out while maintaining a pleasant softness.
  4. The finished kefir dough should be left for 20 minutes, covered with a kitchen towel.
    It will rise slightly, ready for frying.
  5. Prepare your work surface for rolling out the dough.
    It is worth pouring a little flour onto the board. So that the dough does not stick and the donuts turn out beautiful.
  6. Divide the finished mass into several parts, roll them into balls and start rolling.
    Don't make the dough too thin. Raw kefir crumpets should be a couple of centimeters thick. Round molds will help give the dish an appetizing shape. If there are none, then use a cup or glass.
  7. For frying, use a saucepan or deep frying pan.
    Pour oil (2-3 cm) and heat it over the fire. It's time to put the dough into the hot oil. The donuts in the pan should be browned on both sides.

Preparing the dish for serving is the same as in the traditional recipe. Just sprinkle the finished dish with powdered sugar or pour over sweet sauce, jam or honey. Donuts are always delicious, and those made with kefir are also lighter and more tender.

I haven’t cooked something delicious for my loved ones for a long time. There were inspections at work, and therefore, upon returning home, I simply had no strength left. But finally it’s all over and now I can catch up with my lost time and spoil my loved ones with sweets. Returning home from work, I thought what to cook for my household? While passing through the market, I saw a grandmother selling homemade milk and decided to buy a three-liter jar. And then I realized what would definitely please my loved ones - of course, a delicious crumpet with honey and fresh milk.
You know, absolutely anyone can cook it, especially since the dough is not made with yeast, but, nevertheless, the donuts turn out very soft, airy and incredibly tasty. I usually fry them in a frying pan, but you can also cook them.
To prepare this crumpet you will need high-quality kefir of any fat content and soda. It is thanks to her that the donuts turn out soft and airy. So I advise you to pamper your homemade delicious kefir crumpets, fried in a frying pan. I’ll tell you how to cook them now.

Ingredients:
- 1 glass of kefir,
- 2.5 cups flour,
- ½ teaspoon salt,
- 2 tablespoons of granulated sugar,
- ½ teaspoon of soda,
- 3 tablespoons of vegetable oil.

Recipe with photos step by step:

Pour the kefir into a suitable bowl.

Add all bulk products: salt, granulated sugar, soda. I want to say that you don’t need to quench soda with vinegar.

Then sift the flour through a special sieve mug.

Knead the dough well. Pour in vegetable oil at the end. Mix the dough again. Leave it for 20 minutes, covered with cling film.

Then place the dough on the table, which you grease with vegetable oil.
Make balls from the dough. Roll out each of them with a silicone or regular wooden rolling pin.

By the way, the size of future donuts can be absolutely any; for example, I like it when they are very large in diameter, since they are much more convenient to eat later.
Fry the crumpets.

No matter what they cook, no matter how sophisticated they are, sometimes you want the simplest and most ordinary crumpets.
I don’t have a very friendly relationship with dough and therefore baking something is always a little problematic for me, but I still can’t not bake anything at all! So this time I decided to please my friends with simple, tasty, quickly prepared donuts. Why this recipe? And without adding eggs? I answer - with eggs, crumpets quickly become stale and therefore I do not add them, but if anyone has a desire - 2 eggs.
Initially, as indicated in the photo, I pour sugar and a lot of salt into an aluminum bowl. I stir.

Since I am preparing a small amount of dough so that there are not a lot of crumpets, then water is enough for me, in an amount of 300 to 500 milliliters. The water should be warm, not cool, but such that you can hold your finger.
I pour water into a bowl, mix sugar, salt in it and add 1 tablespoon of dry yeast. I leave it like this for a few minutes so that the yeast dissolves in the water.

I mix everything. As much flour is needed as required. The rest of the flour can be removed later.

After mixing, pour about 2-3 tablespoons of sunflower oil into a cup with yeast dough and roll the dough in this oil.

Cover with a towel and leave to infuse in a warm room for about 30 minutes.

The dough has risen, after the set time, I start baking the donuts.

I coat my hands in sunflower oil and form (by carefully tearing them off) small donuts. I fry everything over a fire, a little more than medium, so that the oil is not too absorbed into the dough, and since the crumpets are small, they fry quickly.

I put the resulting donuts in a cup and pour honey on top of each one.

When the donuts are still hot, the honey melts and soaks into the bun. Just right with hot, freshly brewed loose leaf tea!

Bon appetit.
